Melipona Stingless Bee Raw Bee Bread, furthermore, the richness of bee bread in microorganisms can give it the properties of a probiotic product. This product is rich in proteins, simple sugars, essential amino acids, and omega fatty acids. Beebread is a mixture of pollen, honey, and enzymes, stored by the bees in the combs. They add wax and seal the comb cells. 

 

 

This mixture undergoes a lactic acid fermentation which is very similar to that in yogurt and other fermented milk products, and after almost 3 months becomes what we call beebread. This fermentation assures the preservation of the product and enriches it in nutrients.

 

 

 

Pollen collected by stingless bees is stored and packed in honey pots following the addition of various enzymes and nectar, or honey which contains microorganisms to undergo lactic acid fermentation to produce bee bread. Naturally fermented foods are known to contain probiotic bacteria. Thus, the aim of the study was to isolate probiotic bacteria from bee bread and characterize the probiotic potential of bacteria with antibacterial activities against foodborne pathogens.

 

 

The probiotic potential such as acid and bile tolerance, digestive enzyme tolerance, cell surface hydrophobicity, cell autoaggregation, antibacterial activity against foodborne pathogens, blood hemolytic activity, and antibiotic susceptibility was determined. 

Melipona Stingless Bee Beebread combs will often be sold as a whole. For that purpose, a bee queen separator is placed between brood and honey combs during a period of maximum pollen-gathering activity.
 

When the combs are full, the pollen is harvested by means of a scraper and filled into a jar. Of all the products of the hive, beebread is the less explored bee product.
